In SW Wisconsin, must make an appointment several monthes ahead to get cattle slaughtered. Does this indicate a business opportunity?

Did you see the article in Feedstuffs about Meatless Mondays in Baltimore? First, we need to focus on touting the benefits of eating beef and educating consumers on how beef is raised. I'm not connected to processing, but could it be profitable in the area? Have beef cattle numbers increased in the past 4 years?

In Atoka, Oklahoma we must drive 70 miles to a slaughter house. I would think in SW Wisconsin and Atoka,Oklahoma this would be great opportunity.
